Now you can be a proud potato lover. According to the Journal of Food
Science, potatoes pack a powerful punch to help ward off serious
diseases. "We were surprised to find that potatoes are second only to
broccoli in terms of antioxidant activity," says Creighton Miller, at
potato breeder at the Texas Agricultural Experiment Station. "People
should not only eat potatoes, they should eat them skins and all." Bell
peppers, onions and carrots also top the list of diseasepreventing
veggies. What's another reason to indulge in potatoes? One potato
contains half of the daily recommended amount of vitamin C and 750
milligrams of potassium. (Researchers say potassium can possibly help
prevent stroke.)
